Savory Baked Chicken and Potato Recipe with Faux Point Seasoning

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 large potatoes, peeled and sliced into rounds
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons Faux Point seasoning blend (Check out our recipe for this blend!)
  • Salt and pepper to taste
  • 1 cup sliced mushrooms
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth (for gravy)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken, Potatoes, and Mushrooms: Place the chicken breasts, potato slices, and sliced mushrooms in a large baking dish. Arrange them evenly.
  3. Seasoning: Drizzle olive oil over the chicken, potatoes, and mushrooms. Sprinkle Faux Point seasoning blend generously over all ingredients. Season with salt and pepper to taste.
  4. Add Chicken Broth: Pour 1 cup of chicken broth into the baking dish, being careful not to wash away the seasoning.
  5. Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 30-40 minutes or until the chicken is cooked through and the potatoes are tender.
  6. Prepare Gravy: While the chicken and potatoes are baking, prepare the gravy. In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk constantly for about 1-2 minutes to make a roux. Gradually pour in 1 cup of chicken broth while whisking continuously to avoid lumps. Bring the mixture to a simmer and cook until thickened, stirring frequently. Season with salt and pepper to taste.
  7. Baste and Add Mushrooms: Occasionally baste the chicken, potatoes, and mushrooms with the juices from the bottom of the baking dish to keep them moist and flavorful.
  8. Broil (Optional): If desired, remove the foil during the last 10 minutes of baking and switch the oven to broil. Keep an eye on them to prevent burning.
  9. Serve: Once the chicken is cooked through, the potatoes are tender, and the mushrooms are cooked, remove the baking dish from the oven. Pour the prepared gravy over the potatoes and mushrooms. Garnish with chopped fresh parsley if desired. Serve hot and enjoy your flavorful baked chicken and potato dish!
