Ingredients
  

  • lbs ground beef (lean)
  • 1 yellow or red onion chopped
  • 2 tsp garlic, minced
  • 1 (14.5 oz) diced canned tomatoes with green chilies (Rotel)
  • 1 (14.5 oz) diced canned tomatoes
  • 1 (14.5 oz) black beans, drained
  • 1 (14.5 oz) pinto beans, drained
  • 1 (14.5 oz) whole kernel corn, drained
  • 1 (14 oz) beef or vegetable broth
  • 1 (8 oz) can tomato sauce
Spices
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ¾ tsp ground paprika
  • ¼ tsp dried oregano
  • Tbsp dry ranch dressing mix
  • salt and pepper to taste

Method
 

  1. In a large pot brown the ground beef along with the chopped onion and garlic.
  2. When beef is browned stir in all other ingredients and season with salt and pepper to taste.
  3. Cover and simmer for 30 minutes, stirring occasionally.
  4. Enjoy with corn tortilla strips or chips. This soup is also great served with yellow Mexican cornbread. Garnish with grated cheese for extra creamy soup.
