Southern Pound Cake

Every time I visited my grandmother there was always a pound cake on the table. I bet she went through three dozen eggs each week making cakes.

She never shared her recipe. This recipe is very close to hers. She never wrote her recipe down and it was always made from scratch. I really need to see if I can perfect one like hers one day…

Pound Cake

Servings: 12
Course: Dessert

Ingredients
  

  • 1 ½ cups butter
  • 1 pound powdered sugar
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 4 ½ cups cake flour 1 pound

Method
 

  1. Preheat oven to 300F.
  2. Grease and flour a baking pan of choice. A Bunt pan or loaf pan would work.
  3. Have all ingredients at room temperature.
  4. In a large mixing bowl, cream together the butter and sugar.
  5. Add eggs one at a time.
  6. Add extracts.
  7. Add cake flour slowly.
  8. Pour into prepared pan and bake for about 1 hour or until firm to the touch.

Makes 12 servings.
