Easy Beef Casserole

Over the next couple of posts, I will be sharing some recipes I grew up with in the 1980s. Just thinking about them brings back memories of Saturday evening suppertime. Enjoy!

Easy Beef Casserole

Course: Main Course
Cuisine: American

Ingredients
  

  • 1-2 lb ground beef
  • 1/2 onion, chopped
  • 1 can whole white or yellow corn
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 can milk or water
  • 1/2 c sour cream
  • 1 pkg egg noodles
  • bread crumbs
  • salt & pepper
  • 1/3 c butter

Method
 

  1. Brown meat and onions together, drain.
  2. Add all other ingredients (not the bread crumbs or butter) and mix thoroughly.
  3. No need to cook the egg noodles as they will cook during baking.
  4. Put in a 8"x12" casserole dish. 
  5. Mix melted butter with the bread crumbs. 
  6. Evenly top the casserole with bread crumbs.
  7. Bake at 350 degrees for 30 – 45 minutes until bubbly.   Let cool slightly before serving.

Notes

Instead of bread crumbs I like to use Stovetop Stuffing Mix.  Make the stuffing according to the directions.  Spread the stuffing mix evenly across the top of the beef mixture, then cook the casserole as directed.

    1. 🙂 It is a great one. I would say cheap to make but lately the price of beef is really up there in price.

        Yeah it’s getting ridiculous. We have switched to ground turkey and plant based meats lately, healthier and more affordable.
