1980s Sweet Potato Casserole Recipe with Pecan Topping

Over the next couple of posts, I will be sharing some recipes I grew up with in the 1980s. Just thinking about them brings back memories of Saturday evening suppertime. Enjoy!

Sweet Potato Casserole

Ingredients
  

  • 3 c Cooked and mashed sweet potatoes
  • 1 c Sugar
  • 2 Eggs, beaten
  • 2 tsp Vanilla
  • 1/2 c Butter
  • 1/3 c Milk
Topping
  • 1 c Brown Sugar
  • 1 c Chopped Pecans
  • 1/3 c Flour
  • 1/3 c Butter

Method
 

  1. Mix and bake in a greased casserole dish at 350 degrees for 20 minutes.
  2. Mix together topping ingredients and put on top of casserole.  Bake 15 minutes longer.
