Banana Loaf

Recipe from the Purefoy Hotel Cook Book Talladega Alabama 1941
Course: Bread, Breakfast, Dessert, Side Dish

Ingredients
  

  • ½ cup butter
  • 1 cup sugar
  • 2 whole eggs, beaten
  • 2 cups flour
  • 1 tsp soda
  • 3 bananas, mashed fine
  • salt, pinch
  • ¾ cup nuts, chopped optional

Method
 

  1. Cream butter and sugar.
  2. Add beaten eggs, bananas, salt, flour, soda, and nuts.
  3. Beat until very smooth.
  4. Turn mixture into greased loaf pan, and bake at 350 °F degrees for 1 hour.
  5. This makes delicious sandwiches. Cream, cottage cheese, soft butter, and jellies or marmalades may be used for fillings.
